Crown Roast of Lamb

My Ingredients:

1 Crown Roast - 12 cutlets
Stuffing Ingredients
500g cooked, mashed sweet potato
2 1/2 Tbsp sherry
1 egg
1 onion
1 Tbsp chopped parsley


How to make:

Mix all the ingredients together in a bowl.
 Fill the lamb cavity with stuffing and place roast in a baking dish. Bake at 180C  for 1 hour.
